The Bikini Cocktail

Yields 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

For the Cordial: Put the listed items into a saucepan, bring to a gentle boil, stirring so the sugar melts. After that, take off the burner allowing it to cool down entirely. Pour into an sealable bottle, seal and store in the fridge, it will last for about one month.

Preparing the Batch Mix: Pour the specified spirits and syrup in a big jug, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, to ensure it's fully clarified.

When ready to serve: Add 85ml of your batch mix into a mixing glass containing ice, and agitate gently for one minute until cold. Filter to a frosted cocktail glass or equivalent, decorate with a few cranberries and complete it using a quick spritz with the mandarin essence over the top.
